When I was writing the blog posts regarding vitamins, minerals, and superfoods, I was mentioning ‘broccoli’ quite a lot. This inspired me to create an article with some delicious and easy broccoli recipes.

I know that not everybody is a fan of broccoli. But maybe that is because you have never eaten a properly seasoned dish with this superfood! This is the case because broccoli doesn’t go together with every food out there…  Yet, I have selected the best recipes (some of them I’ve adapted a bit according to my own taste). I believe that those recipes will help you to integrate broccoli into your diet easily. So let’s get started!

The first recipe is ‘Modified Pasta Alfredo’

The modification is that this recipe contains a superfood- broccoli of course! It also contains additional ingredients to boost the flavor

Ingredients needed for 1 portion:

  • 100 ml of heavy cream
  • 100 grams pasta of your choice (I use linguine)
  • 1 cup of broccoli cut in medium-small pieces
  • 1/2 cup chicken cut in medium-small pieces (the size should be the same as the size of the broccoli)
  • 3 tablespoons freshly grated parmesan cheese
  • 3 tablespoons grated Grana Padano cheese
  • Olive oil
  • Granulated garlic (optional)
  • Salt
  • Pepper

How to prepare it?

First, fill a big pot with boiling water and add two pinches of salt to it. Put the pasta in the pot and boil it according to the instructions on the package.

Second, pour some olive oil into a hot pan (the stove should be on a high setting). Add the chicken and some salt, and fry it until it becomes golden on the outside. After it is ready, remove it from the pan.

Next, put the broccoli into the same pan and salt them. Fry them, and in any case, DO NOT steam them! We want our broccoli to have good texture! This should be done in medium- heat stove. When the broccoli has golden coating pour the heavy cream in the pan and let the ‘sauce’ boil for 3 minutes.

Finally, add the two types of cheese and the ready chicken to the sauce and wait until the cheese melt. Add some black pepper and granulated garlic to taste. Try the sauce and if you need some more salt- add it!

Put the boiled pasta inside the pan with the sauce and mix well. Serve with some parmesan cheese on top.

You are ready! Enjoy your creamy pasta!

Broccoli Gratin

This recipe is excellent when you want something light, but delicious, that is going to deal with your hunger without making you feel like you have overeaten! I introduce you the Broccoli Gratin!

Ingredients needed for 1 medium tray (2 people):

  • 1 broccoli head (about 500 grams)
  • 1 egg
  • 5 tablespoons of Grana Padano cheese
  • 100 ml of sour cream
  • 4 tablespoons yogurt
  • 1 tablespoon almond flour (or another type of flour)
  • Olive oil
  • Oregano
  • Salt
  • Pepper

How to prepare it?

First, separate the broccoli florets from the stem and put them into a pot with boiling water for 3 minutes.

Take them out and place them in a deep tray. Pour 3 tablespoons of olive oil, some black pepper, oregano and salt to taste. Sprinkle the Grana Padano.

Next, mix the yogurt with the egg and flour and pour the mixture into the tray. Last, add the heavy cream.

Mix everything together until the broccoli are covered well.

Finally, bake the gratin in a preheated oven at 180 degrees Celsius until ready. Enjoy!

Broccoli soup

This is for the soup lovers! Creamy broccoli soup! I am sure you will like it! It’s very light, delicious AND nutritious. You would not stop with eating only one bowl, I promise…

Ingredients needed for 4 portions:

  • 1 broccoli head (about 500 grams)
  • 100 ml of heavy cream
  • 1 tablespoon butter
  • Olive oil
  • Salt
  • Black pepper

How to prepare it?

Peel the potato and separate the broccoli in big florets. Put the vegetables in a pot with boiling water and add 2 tablespoon salt and 2 tablespoons of olive oil. Leave them on the stove until they are cooked properly.

When the vegetables are ready, take them out of the water (do NOT throw the water away) and put them into a blender. Blend until the mixture becomes homogenous.

Put the ‘veg paste’ into a big pot (on low stove setting), add 3 cups of the water which was used for boiling and the heavy cream. Mix well, turn the stove off, and add some black pepper and the butter. It will melt from the soup’s temperature.

Try if the soup is salty enough for you. If not, add some more salt.

Your soup is ready! It was easy, wasn’t it?

Bon Appetit!

Broccoli “meatballs”

Do you like meatballs? If yes, then this recipe will become your favorite broccoli recipe! Broccoli-balls!

Ingredients needed for 2 portions:

  • 1 broccoli head (500 grams)
  • 100 grams feta cheese
  • 2 tablespoons Grana Padano cheese
  • 1 egg
  • 2 tablespoons breadcrumbs
  • Olive oil
  • Salt
  • Black pepper

How to prepare it?

Separate the broccoli florets from the stem and put them in salty boiling water until they are ready. Put them into a bowl or deep plate and mash them with a fork or other tool until they convert into a paste. If there are some bigger pieces left do not worry, they won’t ruin your dish!

Grate the feta cheese and add it to the broccoli paste. Mix well and add Grana Padano, egg, breadcrumbs and 1 tablespoon olive oil. Sprinkle some salt and pepper to taste and mix well until the mixture becomes homogenous.

Pour some olive oil into a hot pan (medium stove setting). When the oil is hot enough, make the balls. To make smaller broccoli-balls take 1 tablespoon of the mixture and make it round with your hands. If you want them bigger, make 1 ball from 2 tablespoons of the mixture, it’s up to you. I like them smaller because I can snack with them easily!

So, put the balls in the pan and fry them- both sides. They should become golden brown when ready.

When you take them out of the pan, leave them on a kitchen paper or napkin in order for the excess oil to be absorbed.

Serve the broccoli-balls as a main or side dish, or as a snack!
